
As you know I am an “almost vegan” who can never be a real vegan but who eats only a little bit of egg or meat every day. For example, an occasional egg white for breakfast, or a strip of turkey bacon for a sandwich. And the secret of being an almost vegan is to seek new recipes all the time. Since I am lazy as far as cooking is concerned, I always look for easy recipes. I have to say some recipes look easy but actually quite complicated. Avoid such “deceptive” recipes as much as possible.
Another secret of being an almost vegan is to get one’s palate to be accustomed to simple non-meat flavors. It takes a while to achieve this. And even if one achieves this for a while, one’s craving can come back one night and one ends up standing in front of the open refrigerator, not knowing what to do to quench one’s desire to bite on something flavorful. This means that if one grew up eating meat, egg, and fish, one probably will have such longing regularly no matter how hard one tries to avoid it. I think right now I am itchy for something very tasty and appetizing once a week. I feel that the frequency has been somewhat reduced in the past three years.
Chickpea Tomato Soup
Drain a can of chickpea, add a cup (or two cups depending on your preference. It can be a thick soup or a watery soup) of water, blend it in a blender as thoroughly as possible. Pour the content of the blender into a pot, add a can of Campbell tomato soup. Boil it. It is simple and it is quite good. I like Campbell tomato soup very much, but it doesn’t have protein in it and can’t be a meal. With the added chickpea, this can be a meal.
Eggplant and Winter Melon Stir Fry
This is so easy to do. Skin the eggplant and winter melon, and cut them into bite sized little chunks. Put them into a pan, add Lee Kum Kee’s Brown Braising Sauce. Or if you don’t have it, add dark soy sauce and sugar. Cook until tender. That’s it and it is quite delicious.
Basil Fried Rice
I have always loved Thai basil fried rice, but it is very complicated and quite spicy. I want something simple and not spicy. So I watched a video in which basil leaves are added into a plain egg fried rice. I think I am going to try it to see how good it is.
Soy Oatmeal Pancake
I heard about oatmeal pancakes, but I’ve never tried it. So I bought oatmeal this weekend. I am going to blend it in the blender, mix it with soymilk, and add raisin or blueberry to make little pancake out of them soon.
Non-Boiled Noodle With Tomato Sauce
I watched a video in which it is said that in one specific region in Italy people don’t boil their pasta. Instead, they stew pasta with pasta sauce. I am going to stew noodle with tomato sauce to see what will happen. Probably the noodle will be more flavorful.
